Juniper Berry
Juniperus communis
Crisp, gin-bright, a little peppery.
Juniper berry is bright and resinous, the smell of gin and cold hillsides. It sharpens a woody blend and keeps it from going heavy.
The source
High, dry slopes
Juniper has been picked from cold, high hillsides across Europe for centuries; the berries take two to three years to ripen on the bush. Ours comes from Bulgaria, steam-distilled from the berry, crisp and gin-bright with a peppery edge.
